Tips to recreate vegetarian calzone at home
Here Gousto shares some recipes for you to try at home.
Vegetarian calzone
Use up any leftover veggies in our cheesy, crispy Italian calzone. You’ll create a three-cheese filling, a crispy golden-brown crust and a rich marinara dipping sauce.
Swap out any of the veggie fillings to use up what you have leftover in the fridge, like spinach or green beans - just chop them up and throw it into the mix!

Ingredients
Serves 1
100 g (1 portion) Premade pizza dough or see below for a homemade pizza dough recipe.
1 Head of broccoli
60 g Peas, frozen
85 g Ricotta (Can’t find it? Pop cottage cheese in a sieve, rinse under a cold tap and weigh out the cheese curds)
10 g Italian hard cheese, grated
75 g Mozzarella, shredded
4 tbsp Tomato paste
1 tsp dried oregano
Pinch of sugar and salt
Method
Step 1: Cut the broccoli into florets and roast in a preheated oven at 220ºC/200ºC fan/gas 7 for 10 minutes.

Hide AdStep 2: Remove your tray from the oven and add the frozen peas. Return to the oven and continue to cook for a further 5 minutes.
Step 3: Once roasted, mix the vegetables in a bowl with the three cheeses.
Step 4: Roll your dough out into a large circle (12-15cm).
Step 5: Add your filling to one half of the dough, fold the other half over and crimp the edges together with a fork to keep the filling in.
Step 6: Place in the oven and bake for 20 minutes until golden brown.

Hide AdTop tip! Once done, leave it to cool for 5 minutes. (The filling inside is very hot!)
Step 7: While your calzone bakes, add the tomato paste, 8 tbsp water, oregano and a pinch of salt and sugar to a small saucepan and simmer until thick and saucy. This is your marinara dipping sauce.
Step 8: Serve your calzone with the marinara sauce to the side.
For the pizza dough...
Ingredients
Makes 2 large or 3-4 smaller pizzas
380g plain flour
3 tsp baking powder
1 tsp flaky sea salt
1 tbsp olive oil
185ml warm water
Method
Step 1: Preheat the oven to Gas Mark 6/200ºC/180ºC fan.
Step 2: Whisk the dry ingredients in a bowl until thoroughly combined.

Hide AdStep 3: Add the liquid and stir until it’s almost come together, then turn out onto a clean work surface and knead for a couple of minutes until shiny and smooth.
Step 4: Divide the dough into the number of pizzas you are making.
Step 5: Roll out your dough until it’s around 2mm thick and spread over your toppings (check out our favourite base recipe here!)
Step 6: Bake for 15 minutes until golden and crispy.
Slice and serve!
